| During the Civil War, Thomas Jefferson Hathcoat had only one milk cow left. They heard the Union Army was coming that way so they hid the cow in the woods. But the cow was found and butchered by Union soldiers, leaving only the hide and head. Anna, Thomas Jefferson's wife, took the head and hide that the soldiers left behind, and cooked them in a big wash kettle. She used a bed sheet to strain the hair out of the broth, gathered dock-poke, and other kinds of greens, and put it all back in the pot. Cooking it for her family. They did what they had to do in order to survive. (Wesley Gene Hathcoat, 2001). |
